The Red Velvet was due Friday and I had a week notice so I had plenty of time to prepare but... I procrastinated like a idiot and waited til Thursday night to do it. I'd done Red Velvet before but only as cupcakes so this was my first traditional one. Baking the cakes were no problem I just had to double my recipe, my real problem came when it was time to frost the cake. The cream cheese frosting recipe I have is not very workable and it doesn't crust over so I had to crumb coat... refridgerate... frost... refridgerate... smooth... refridgerate... then decorate. The longest cake process I've ever been through. Needless to say I was up til 3am with this thing. Then, I was out of cake boxes in the size I needed so I had to run up to the hobby store after I dropped my kids off at school. After that I had a bunch of other errands to run all with a baby in tow and feeling kinda crummy. Then I had to get to the house, box the cake, meet the lady at the school and load the kids in the car.
So that was my lovely Friday morning through afternoon. Once I was settled in the car with all the kids, I had to pick up a friend from work on the other side of town. Not that I minded because I'd planned to settle down at home and relax with a hot tea... but then the phone rang. My mom called me to remind me it was my middle brother's birthday (which I already knew) and she needed me to "whip up" a quick cake. Of course I couldn't say no since it was for my brother, so I told her I'd get started on it soon as I got home and to keep him busy for a couple hours.
She wanted a 6in personal cake but I don't have 6in pans so I just bake 8in cakes and cut them to the size and shape I need. So to save me some work I just decided to leave it an 8in round cake. My next challenge was to come up with a quick design. I decided on FSU (his favorite team) on a frozen buttercream transfer (FBT). Why? I have no idea seeing as I have NEVER done a FBT before!! I guess I thought I'd give myself a challenge and make something really awesome!! Well, chanllenge myself I did!! Talk about hand crap!!! I think my hand was stuck in the shape of my piping bag for at least and hour after I was done! All in all, I think I did pretty good for my first FBT.
