Of course, as with baking or any cooking for that matter, the first thing you want to do is find a quality stoneware provider. How the pan is made is key in how it bakes and how long it lasts. From what I've read most stoneware providers also provide at least a 3 year warrenty but if cared for properly stoneware pans can last for generations. If you're a true believer in organic living then stoneware are indeed the way to go for you! Stoneware is completely toxin and lead-free so no worries about rust and other metal based toxins cooking into your food.
Again, I'm not the most educated person on stoneware baking being that I personally have never tried using it but the research has been very enlightening! I found a wonderful site called Keeper of the Home that has lots more information than I can give including some great places to find and buy stoneware pans and products.
